Sparkling - The Cuvee Shiraz 2013


A new name and a subtle change in style.

The Cuvee Consonance Shiraz has been renamed The Cuvee Shiraz. A simpler name, but a more complex base wine and sophisticated style.


Natural yeast fermentation in open fermenters for a period of two weeks. Maturation in French oak provides a hint of toast and savoury oak character whilst allowing the Shiraz varietal and regional characters to be expressed unhindered. Two rackings and regular topping are the only time the wine is disturbed post malo with two and a half years spent in oak. Bottling date is determined when the tannin and oak balance feel right. After secondary fermentation, a splash of VP Touriga Nacional is added with the dosage to impart sweetness and add a little character. The minimalist approach used to make the Cuvee Consonance Shiraz precludes the use of the additives and fining agents such as enzymes, egg, fish or milk products (this wine is Vegan friendly).

Tasting Notes

Deep crimson red in colour with an enthusiastic mousse. Lifted aromas of rich plum and Christmas cake backed by exotic Asian spices. Plush and softly textured on the palate with blackberry flavours interwoven with dark earth, anise and a hint of toast. The long length of persistence is supported by soft acidity, a hint of sweetness and layers of velvety tannin. Drink now to 2022.
