There are a handful of wines made in the world that use maturation under yeast flor to achieve a nutty and dry style perfect as an aperitif. Dry Sherry such as Fino and the Vin Jaune style of the Jura are the two standouts in the world of wine. Being a little wine obsessed, we made our own unique take on the style from vintage 2012.

Alcohol – 13.0%
Winemaking – Adelaide Hills Semillon was fermented to dryness in new French oak using natural yeast. The wine was matured and yeast flor was allowed to grow, the wine was mature in new oak under flor for 10 years prior to bottling in November of 2022.
Tasting Notes
Mid gold in colour. Intense aromas of apple and ginger with a hint of almond and brioche. On the palate the dried fruit flavours are accompanied by creme brulee and a delicious nutty edge. A very long and lingering length of persistence with a dry and refreshing finish.
